Verjus - Unfermented juice of unripe wine grapes
Verjus, or "verjuice" as it is sometimes called, was first used in the sixteenth century Europe, but then forgotten with the arrival of the lemon. Now verjus is back as a culinary ingredient indigenous to the world’s wine producing regions. We sampled verjus at a vineyard in Baden-Württemberg that is owned by three chefs who are cultivating the delectable acidic product.
