Con la coda del filetto ricaviamo due porzioni di steak tartare. Tritiamo a coltello la parte terminale del filetto. Poniamo la carne così ottenuta su un piatto freddo, aiutandoci con un anello di metallo, il cosiddetto tagliapasta, per formare un cerchio perfetto.
