Irish Soda Bread
Back in Jersey, every St. Patty’s Day we would somehow end up with loaves and loaves of Irish Soda Bread in our kitchen. It seemed everyone on the block would be comparing and contrasting different recipes in order to come up with the perfect combination, and ofcourse, what better way to test your recipes then on your neighbors! So, after years of trial and error I have settled on a what has come to be my favorite recipe for Irish Soda Bread...It comes from a family I grew up with, and I simply added in some of my healthier substitutions.  This recipe has the perfect hint of sweetness, with a dry texture embodied with plump, golden, raisins and crunchy caraway seeds, just the way I like it! Try toasting it up with a light spread of butter...yum!!
