Reviewer’s Note: This recipe comes from Dede’s kitchen for multipurpose dough that can be used for pizzas, with meats and vegetables. The dough is leavened with yeast and is prepared by first putting the yeast to the bowl of a kitchen aid mixer. In the absence of a mixer a mixing bowl can also be used. One cup of warm water and one spoonful of sugar are added to the yeast. The sugar helps in activating the yeast. The mixture is stirred a little and left to sit for sometime allowing the yeast to activate. After 10 minutes, 2 tablespoons of extra virgin olive oil. Some salt may be added according to taste. The mixture is set to mix in the mixer slowly while the flour is pored slowly into it. 3 cups of flour is used for this recipe. If the dough starts to seem crumbly then some water is to be added to the mixture slowly, one tablespoon at a time . the same applies to flour if the dough is too wet. After the dough comes together nicely, it is taken out and kneaded nicely. It is always advisable to sprinkle a little flour on the kneading board as that prevents the dough from sticking to ones’ fingers. The dough is shaped loosely but firmly into a large ball and placed in a glass bowl that is to be sprinkled with 2 teaspoons of olive oil beforehand. The dough is placed in it and flipped once or twice to ensure that it gets coated with olive oil. Then the bowl is covered with a plastic wrap and a black/dark towel and left to sit in a warm place. The place should not be hot but relatively warm. It should be left to sit and rise for an hour. After an hour, it is taken out of the bowl and placed on the cutting board. Depending upon what kind of a dish one is going to make, the dough is divided and shaped and again left to sit for about 10 minutes to rise a little more.
