進入農曆新年前夕尾聲,有甚麼事項需要特別注意?今集阿蘇繼續向鄭寶鴻師傅請教。傳統上年廿九是婦女打扮日,就是到美容店電髮及線面;至於年三十晚,就是一家人團年的好時機。 大家知唔知阿蘇過團年會有甚麼菜式?富貴人家出身的她怎少得了鮑魚呢!要煮鮑魚,秘訣先要用水浸發三天,浸時不時換水,不然鮑魚會很容易發出霉味。如果不懂得處理鮑魚,阿蘇教你可以找均嫂待勞。 吃過團年飯後很多人都會到年宵市場閒逛,不過,還有一件事是必做的,就是「壓米缸」!壓米缸是南方人的傳統習俗,一般都有魚有肉有利是有雙桔,再加砧板壓於米缸上,寓意是年年有餘。阿蘇謂壓米缸的魚最好加甜麵豉醬醃好,待年初二後就可用來煮開年飯! 至於新年菜式怎可少了齋菜?今集阿蘇就下廚教你煮幼細齋。煮幼細齋要預備八樣菜,取意頭「發財」嘛!今次阿蘇教煮的齋菜是用蠔油代替南乳,味道如何?斧頭E一人就吃了半碟,至於你呢?
