蔡瀾歎名菜 - 豐儉由人潮州菜 - 第4集
蔡瀾是潮州人當然要介紹潮州的名菜給大家品嚐,首先上碟的是兩大名貴菜色潮州翅及白灼響螺片,潮州翅一定要下豬油煮才夠香味及地道,而白灼響螺片的價錢多年變化不大,但響螺的體積則是愈來愈小,而響螺頭則是潮州人的至愛,主要原因貪它味道夠濃。 除了名貴菜色之外,潮州菜亦有很多平民化滋味之選,當中以鹹菜胡椒粉腸豬肚湯最出名,其次如涼瓜黃豆排骨湯、花生炆豬尾、凍蟹、半煎煮馬友及豬腳凍等等,都是必吃之選。今集蔡生帶大窕到一間充滿特色的潮州食店,一次食盡上述各種名菜。 潮州食品亦有很多特色的雜糧,例如潮州粽、綠豆餅、蔥油餅、花生豬頭、大發豬頭、米潤糖、雲片糕、糯米粿、花生粿、韭菜粿、潮式炒糕粿及魚飯等等。每款食品都各有滋味,蔡生就會帶兩位美主持走遍九龍城及上環當一日潮州人,食勻各種特色食物。 蔡生請來兩位大廚出手烹調兩大潮州傳統名菜,就是龍穿虎肚及金瓜芋泥,兩道菜都是坊間少見,因為工序繁複,不是一般食肆會願意隨時準備。這兩道菜色連名廚周中品嚐過後,都大讚味道出眾,值得一再品嚐。 不得不提的是潮州魚蛋及牛丸亦是著名的食品,蔡生會訪問他的老友,介紹魚蛋及牛丸的製法,又會介紹潮州四寶、魚餅當中有趣的知識及變化過程。
