蘇Good - 冬至煮「凍」 - 第48集
冬至就快到,正所謂「冬大過年」,大家都應該是時候準備一餐豐富的晚餐,今集開始,阿蘇將會教大家一些冬至菜式,今集講「凍」。 「凍」就是雪凍了、形成啫喱狀的汁,材料包括豬手、冬筍、鵝翼、鵝掌、冬菇,先把冬筍煮一會,汆水再浸冷水,然後燜好豬手和鵝掌,後加鵝翼和把冬筍回鍋,由於要造「凍」的關係,所以汁料會比較多,把材料和汁倒出後,放涼再放進雪櫃雪凍即成。 除了「凍」外,阿蘇繼續準備第二樣餸,就是煮龍崗雞,醃雞技巧也有注意的地方,要用鹽醃好雞的內部和大腿,下一集就可以用了。
