山東省長島縣有中國鮑魚之鄉的美譽,今集韜韜和張美妮會尋找上等鮑魚──皺紋盤鮑。那裡的鮑魚一般會養殖約3至7年,主持與威哥出海欣賞鞋人如何捕捉放養的鮮鮑。而皺紋盤鮑用來製作乾鮑更是一流,大家將會看到威哥親自示範,程序複雜講究。優質的乾鮑本身帶有鮑魚的獨特鮮香,將之與炸排骨及炸雞一同熬煮超過20小時,加入遼參再以鮑魚汁燴煮,便成為一隻隻美味溏心鮑魚。 除了乾鮑外,今集也會介紹另一種香港少見的海產──海腸。海腸是一種生活於水中的軟體動物,無毛,吸水後會脹大三至四倍。將海腸去除腸臟及血水後,只需白灼便可以加入調味成為涼拌海腸,口感又爽又脆,味道又鮮又甜,因為它的鮮味勁強,故亦有味王之稱。而鮮炒海腸的味道,更是比象拔蚌更鮮。再來一道酥炸黃花魚,皮脆、肉滑又香口,佐酒一流!
