今集,阿蘇將會教大家煮一味心機菜,就是蘿蔔炒魚鬆,為何說時心機菜?因為處理這道菜的時間一點也不少,需要很多的耐性,慢功才出細貨。 很多人煮蘿蔔,都會開一鍋水來煮,但蘿蔔會吸引過多水份而變得不好吃,阿蘇教用生炒,把蘿蔔切成條狀落鑊炒半小時左右,炒時在鑊邊慢慢地加點點水,炒至透明便算成功。 鯪魚肉堅持要自己剁,剁時加少許鹽可令肉質較彈性,煎時亦用慢火,耐心地煎至金黃色,微微偏燶,食落脆口好味。最後把兩樣食材一起炒,加蠔油、糖、老抽,用了一大擔的心機,原來,真的好食到不得之了。
