位於廣東省內的羅定,最著名的產物就是豆豉,今集韜韜美妮會去到豆豉村,見識當地人採用上乘黑豆做豆豉的繁複工序。黑豆煮熟後開始發酵,及後洗豆撈鹽,再把豆豉在太陽下曬,豆豉香味由此以來。 上乘的豆豉,烏黑亮澤,聞落有濃郁豉味,將之配搭嘴黃、毛黃、腳黃的優質放養三黃雞,便成為一道千里香的羅定豆豉雞,又嫩又滑又入味。另外,以黑豆做的豆腐顏色淺灰,賣相比不上「白雪雪」的白豆腐,但口感竟然比白豆腐更嫩滑,營養價值更高。 韜韜又會去到桫欏,看看村民以山泉水養魚,所謂的「氹仔魚」,即是鯇魚。枝竹炆氹仔魚腩,魚腩脂肪分佈均勻,又綿又滑;豉汁蒸氹仔魚頭尾,豉汁香味完全溶化於魚肉中,魚尾肉口感爽脆。最後再來兩道魚腐粥及上湯魚腐,軟綿綿極富魚鮮味。 製魚腐,選料講究、程序嚴謹,並不簡單!羅定魚腐選用鯪魚打製,貪其夠鮮甜,師傅先將新鮮生猛的鯪魚起肉、攪碎再打到起膠,再將起膠後的鯪魚肉調味,逐粒以人手揤出來,以冷油炸至金黃色,便成為一粒粒香、脆、鮮的皺紗魚腐。當地人教,蘸煉奶至正!
