遼東半島沿海一帶所出產的刺參,俗稱為遼參。遼參於低溫度環境生長,生長速度較慢,但品質反而更高。今集韜韜和美妮會去參觀山東長島縣大竹山島的海參育苗場,在那裡人工培殖的海參直至半歲大後,會被放養到附近水域的天然養殖場繼續生長,大約四年便可收成,節目中還會教大家如何揀選靚海參。 1斤乾參,要用上36斤鮮遼參來曬製,而1斤約有40至60條的乾參屬一級貨。發乾參時,切忌沾到油份,約發到7倍大效果更好。遼參煮出來的菜式亦有很多,心心相印即海參炒花旗參,味道甘甜清爽;海怪醬爆遼參的海怪醬其實是以海中蟹仔自製的獨特醬料,味鮮且夠惹味;百花釀遼參將蝦膠釀入遼參,巧手精緻。 品嚐遼參之前,先去一嚐遼參的天敵──石蟹──的味道。石蟹雖然外表似花蟹,但其實較似肉蟹,殼硬而肉厚。另外,因為遼參本身的外皮非常硬,師傅示範苦練多年的刀工,來一道新鮮遼參刺身,刺身薄得透明入口似海蜇頭,相當有嚼頭。除了生吃,熟食原條上湯煲的海參,蘸上特製醬料,更為香口。
