A handful of courgettes.1 punnett of tomatoes.A bunch of basil. 1/2 a clove of garlic.Olive oil.Seasoning.Soak your haricot beans in cold water overnight Drain, cover with water and bring to the boil. Reduce the heat and simmer for 1 hour. Drain, season and dress with 2 tblsps of olive oil.Take a few courgettes and slice into thin ribbons. Grill until tender and slightly charred.To make your dressing blitz the basil, garlic and olive oil in a blender until smooth.Chop your tomatoes and gently mix with the haricot beans and courgettes. Add dressing liberally and serve with a chunk of bread.Enjoy.
