全聚德烤鴨切工表演
全聚德的特色菜是北京烤鴨,對選鴨、填餵、宰殺,到燒烤幾個步驟要求都極高。全聚德選的 北京填鴨 都是不足百天,體重在五斤以上的北京鴨。被宰殺褪毛的鴨子在右膀下被挖個小洞,處理人員伸二指入這個小洞取出內臟,然後用淨水把鴨子裡外洗淨,處理人員用嘴把鴨皮吹鼓,插一節秫秸到鴨尾里,把清水從鴨膀下的洞灌入,並用絲線將洞口縫合。完成後,鴨子被掛在鉤上入爐烤。如此外烤內煮,鴨子便烤好,外皮呈油黃。吃入口中,鴨肉特別鮮嫩,肉雖肥而不膩,味美香甜,常吃不厭。 全聚德的掛爐烤鴨選用果木(如:棗木、梨木)為燃料進行烤制,果木為硬木,耐烤,火底足,烤出來的鴨子多多少少有些果木香。爐子不安爐門,烤制的同時,還要往鴨子上面淋(刷)油,以防止烤糊。 用餐完畢後服務員會發給一張紀念明信片,上面記載本次用餐為全聚德創立迄今售出的第幾隻烤鴨。
