Puliogre Gojju is a tamarind concentrate with added rasam powder, jaggery and a little salt which is used for making one type of puliogre ( there are many varieties of puliogre, this one is the mysore variety and is considered by many - including me :-) - as the best ). You can also make rasam and gojju avval( flaked rice, a breakfast item ) from this puliogre gojju. Here is how it is made: You take about 100 gms of tamarind and boil it in water for about 5 mts.. then extract the pulp and take out the rind from the liquid. You boil the tamarind juice till it reduces in its volume to about its half volume.. then add about 5 tablespoons of the rasam powder ( not the commercially available powder, but the one I have shown in my earlier clip ). Add to this about 20 to 25 gms of jaggery and about 5 teaspoons of salt.. When the mass cools down it becomes a thick paste. Preserve this in glass containers for use in making puliogre whenever you wish ..( this gojju, when kept arefully can last months under refrigeration ) My next clip will show how to use this gojju for making puliogre ( i decided the clip would be too long if i included the puliogre making in the clip and so have split it into gojju making and puliogre making )
