Marinated Mushrooms
Reviewer’s Note: Karen Knowler, the raw food coach shows you how to make simple yet delicious marinated mushrooms in this video.  This recipe for marinated mushrooms only requires some extra virgin olive oil, some tamari soy sauce and some peeled mushrooms. The mushrooms need to be peeled and scrubbed very well before they are used and also de-stalked. Karen advises that it is always better to use organic mushrooms. The mushrooms are then taken and transferred to a big bowl and have the olive oil added to them straight from the bottle. A generous quantity of olive oil is used, for raw mushrooms really soak up the oil as they are very porous. So it is always advised to give a little more oil than you think is needed. Toss the mushroom around in the bowl using your hands so that all the mushrooms are coated evenly. Then the tamari soy sauce is also poured over the mushrooms. Once again a little more is to be used, than you think is needed. It is to be noted here that different sized mushrooms need different amount of oil and sauce. The mushrooms are once again tossed around with hand and left to sit for a few hours. The mushrooms can be eaten immediately but for a better taste and flavor Karen recommends to let the mushrooms sit for at least two hours before they are eaten. This is all there is to the recipe. Karen says that marinated mushrooms can be experimented with by letting them marinate overnight and dehydrating the mushrooms after marinating them in a dehydrator.
