阿蘇提倡,食要簡約,廚房左一支生抽,右一友老抽,前一瓶糖,後一瓶生粉,便足以撐場。阿蘇自己就最常用生抽和老抽,今集,她會帶大家去到元朗的一間豉油廠,看看整個豉油的生產過程。 這間醬油工場只有三個人工作,用的是古法製作,一支豉油的成品時間需要用上超過一年,曾老太是真正用心的生意人,幾十年功力不減,滿口化學用語,為大家講解每一個步驟,令阿蘇從未如此化學過。 豉油配白灼蝦是絕配,今次阿蘇分別用上三種豉油食法作比較,最無添加的,原來最好。
