黃傑龍：「最近的金融海嘯和人類豬流感，對香港的飲食業，不多不少在生意上都有些影響，與其苦思生意為何會變差，倒不如積極地想一想，可以正面做些甚麼去改善、裝備自己呢？我覺得這樣可以更加改善情況，應該堅持一些固有的信念，譬如我們都堅持的誠信，一定要堅持用料貨真價實，同時間還要引入新的元素，譬如在管理上我們引入了知識型管理的辦法，務求在逆境之中可以管理得更好，我覺得香港人只要堅持自己的信念，再加上新的思維、新的創意，很快就會跨過困難。」
