Being Irish means that I am born with a passion for potatoes but even I get bored of them sometimes and think they need to be jazzed up ever so slightly. How many times have you been served side orders of spuds that do very little to excite the palate such as...mashed potatoes, chips, wedges etc etc. Well on a recent trip to Barry’s kitchen in London I thought I would cook something with potatoes that would make a change to the usual boring fodder!
