蔡瀾歎名菜 - 食勻香港日本菜 - 第9集
香港人除了喜歡中國菜外,日本菜其實都大受不同年紀人士歡迎,今集就會帶大家去香港各處的具水準日本食肆,做個識食「日本人」。 日本料理中的天婦羅,最講究材料的新鮮及大廚的手藝,因為只要時間一久,天婦羅就會變成「地」婦羅。另外,日本的咖哩別及拉麵別具一格,有別於其他國口味要慢慢品嚐。 料理中因為常用砧板,一塊好的砧板除了保持衛生之外,亦幫助廚師發揮他的刀工實力,但如何選一塊好砧板,就等蔡瀾一一道來。 最熱氣的日本料理是鐵板燒,熱氣是指夠熱辣辣,而且要趁熱食才好食,有別於剌生及壽司要凍冰冰才好食。今集介紹鐵板薄燒牛肉卷、鐵板厚燒牛肉、鐵板燒鰻魚、鐵板海膽炒飯等等愈熱愈好食的料理。 今集嘉賓請來曾志偉與三位主持品嚐懷石料理,是日本料理當中最高境界,大廚要配合時令材料及超凡手藝才可以創作出不有如藝術般的料理,今集介紹有鮮腐皮豆腐釀海膽、凍浸金時草海苔、滷水鴨胸肉、炸鮑魚配蠶豆、活八爪魚伴蘿蔔蓉醋等等。
