Aubergine souffle with goat cheese
This recipe comes to us from the restaurant "Seraser" in the Turkish resort of Antalya.   Ingredients 150g grilled aubergine 100g goat cheese 30g all-purpose flour 30g unsalted butter 150ml milk 50g egg yolk 100g egg white (whipped) 200g breadcrumbs Salt, white pepper Preparation -grill aubergines then peel and chop very fine -melt butter in a saucepan -add flour and milk to the butter, then add aubergines and goat cheese -allow to cool -add egg yolks -adjust the seasoning -carefully fold in whipped egg white -using a mould or a coffee cup, spread melted butter then spread breadcrumbs -place in oven at 160 C for 15-20 minutes. Serving -slice bell peppers and sauté with extra virgin olive oil -adjust the seasoning, add fresh thyme -slice aubergines very thin and deep fry them -add pinenuts, paint the plate with pesto sauce and balsamic glaze (optional)
