How to Preserve Garlic and Herbs in Oil
Domenic Chiaromonte, executive chef of Match Restaurant just outside Toronto, chops garlic and basil and stores them in oil in the fridge. This is a multipurpose tip: The herbs and garlic will keep for weeks in the oil, and will be chopped and ready when you need them. Plus, the oil they’re stored in will take on a nice flavor.
